Four and a half years passed between 6.16 and 7.21 - I'm sure you can imagine that some significant changes occurred between the versions. Not least of these changes is that zMUD moved to a different copy protection system, which will mean you'll have to log into the store using the email address you used when you bought zMUD; if you can't remember it or don't have access to it any more, you'll need to get in touch with Chiara here to get a new license key.

But yes, some significant changes occurred between 6.16 and 7.21, which may mean you'll have to update your scripts. There's no way around that, but you'll find that your scripts should generally work better in the new version, so it'll be worth the effort. A full explanation of some of the vagaries of upgrading to 7.x is here. (NB: The licensing information on that page is outdated, but the rest of it should still be good).

As for zChat, I'm afraid I never used it and can't attest to what it's like in 7.21.

The main and simplest-to-explain benefits are that CMUD is still being developed and is supported on Vista (and will be supported on future versions of Windows as and when they happen). zMUD's development finished in September 2005 and it's not supported on anything later than XP. A fuller comparison is here - each of the row titles on the left-hand side is a link to an explanation of that feature.

I'm not sure what you're question is - is it possible to use both simultaneously? Certainly. But it can be difficult to return your CMUD scripts to zMUD if you decide to downgrade - the text export in zMUD was pretty broken, so CMUD doesn't use it. Instead it uses a more robust XML format, but unfortunately zMUD can't import that. CMUD also adds a whole bunch of extra options to just about everything, which zMUD then can't understand. I guess my advice is that if you think you might want to downgrade, don't become too attached to the new features in CMUD ;)
