Scripts for replacing words in sentences...

I am pretty bad at this scripting thing, though I do understand something if I get a good example, and can do it from that, but I want to know, for one, is there a way to make it so that if I type a word, it reads it as a different word, like for instance, I type this:
say Hello there.
But it replaces that whole thing with:
say G'day thar.
And secondly, can it be caps specific? Thank you for any help you can get me.
